You can pretend like you’re eating breakfast when you gobble down these homey bars– oatmeal, almonds & cherry jam… a lot of old fashioned flavor in crumbly little bites.
OATMEAL CHERRY BARS
1 1/2 cups flour
1 tsp. baking powder
1/2 tsp. salt
1 1/2 cups oatmeal
1 cup brown sugar
1 cup butter or margarine
1 1/2 cups cherry preserves
1/2 cup sliced almonds
Mix up the flour, baking powder, salt, oatmeal and brown sugar in a bowl. Cut in the butter with a pastry blender until crumbly. You can do this in a food processor too, if you don’t mind washing it all up. Spray a 9″x13″ pan with Pam and then press in 2/3 of the oatmeal mixture to cover the bottom of the pan. Spread on the cherry jam. And then crumble on the remaining oatmeal mixture. Top with sliced almonds and set it in a 350 degree over for 30 to 35 minutes until it is firm and browned a bit. Cool a bit before you but them into bars to let them set up.
Pour yourself a cup of tea and try to eat just one! Of course, you can use any type of jam– apricot, blueberry, orange marmalade… Hope you like these crumbly little bars.
