Pear Walnut Bread

IMG_8541Hello all-  My Monday night friends are coming in tonight after our break for Christmas and all the holiday hubbub.  I can’t wait to see their sweet faces and hear all of their stories as they drift in the front door.  I’ve got pear bread in the oven to set out with the coffee and Larry can make us a fire to warm us all up.  It will be a good time…

2/3 cup canola oil
1 1/3 cup sugar
2 eggs
2 large pears, peeled, cored and chopped to bits
1 cup chopped walnuts
2 tsp. vanilla
2 cups flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. pumpkin pie spice (or cinnamon)

IMG_8553Mix together the oil, sugar and eggs.  Stir in the pears, nuts and vanilla.  Then mix in the dry ingredients– flour, baking powder, salt and pumpkin pie spice.  Spoon it all into a standard size bread pan (or I like to use two smaller pans) sprayed with cooking spray.  Bake at 350 degrees for 45 to 50 minutes, until it is browned and firm to the touch.

Serve the bread warm with butter and honey and big mugs of tea.  And toast up the leftovers for breakfast in the morning.  Just good old fashioned food.
