Hello all– This recipe said “pancake,” so I popped it in the oven for breakfast. And it was delicious– hot and custard-y and full of sweet raspberries. But I thought it was so luscious that it deserved a promotion from breakfast up to desert. So we ate if after dinner for desert that very night with a friend– a lovely light ending to a summer dinner.
FINNISH RASPBERRY PANCAKE
1 cup flour
2 tab. sugar
1/4 tsp. salt
2 cups milk
1/4 cup melted butter
2 eggs
1 tsp. vanilla
6 oz. box of raspberries (about a cup)
1/4 cup sugar
.
In a mixing bowl stir together the flour, sugar and salt. Then whisk in the milk, melted butter, eggs and vanilla. Pour is it all into a 10″ baking dish sprayed with cooking spray. Sprinkle the raspberries and sugar on top and pop it into a 400 even for 45 minutes until it’s puffy and nicely browned.

Just this morning I though I would love to make pancakes or french toast with strawberries. I am going to make this instead. I will have to use strawberries rather than raspberries though. Thank you for posting this in perfect timing.
We just had this for breakfast and it was fantastic. I loved the custard-y center and the crunchiness of the top and edges. Even with strawberries this is truly a delight.
So glad it was a success! I’m going to try it with strawberries too– or go wild with peaches or blueberries. thanks!
I bet peaches would be fantastic! I really loved this recipe. My 15 year old son was delighted too. My husband and I only had one slice and the boy finished the rest! 🙂
Wow, this looks so delicious! I have both strawberries and raspberries in the fridge so I’m going to give this a go very soon. I love custardy desserts, so this sounds perfect! Thanks for sharing!
Use them both? sounds yummy.
I made blueberry pancakes today but I will certainly try this out with the raspberries! Great pics! Thank you so much for sharing!
Don’t you love summer, when all the good fruit is in?
For sure! Right now am in California and the fruit here is outrageously delicious……
