ROCKY ROAD OATMEAL BARS
1/2 cup butter, room temperature
1 cup brown sugar
1 1/2 tsp. vanilla
1 cup flour
1 1/2 tsp. baking powder
1/2 tsp. salt
2 cups of old fashioned oats (oatmeal)
1 1/2 cup mini-marshmallows
1 cup walnuts, chopped ( or almonds or pecans)
1 cup chocolate chips
With an electric mixer, cream the butter and brown sugar together. Beat in the eggs and vanilla. Then mix in the flour, baking powder, salt and oats. Spread the mixture in a 9″ square pan that has been sprayed with cooking spray.
Pop it in a 350 degree oven for 20 minutes.
Finally, sprinkle the marshmallows, chocolate chips and nuts over the almost baked cooked bars and then put them back into the oven for 10 minutes.
Cool and cut into homey little cookie bars. A cup of tea on the side is recommended.
