Hi friends– Some months our Book Club ends up at a place your grandma would love– “Polly’s” — soup on the back burner and truly good homemade pies. And I always order the chicken salad sandwich on raisin walnut bread to munch as we talk our way into the varied opinions of our current book.
So when I came across the chicken salad recipe, I couldn’t resist trying my hand at a little chicken salad of my own.
BEST CHICKEN SALAD
Sauce:
1/3 cup mayo
1/3 cup unflavored yogurt
1 tsp. dill
1 clove garlic, finely minced
1 tsp. garlic powder
1/4 cup buttermilk*
Chicken:
3 cups chicken, cut in chunks**
1 small carrot, grated
2 tab. green onion, finely chopped
1/3 cup green bell pepper finely chopped
1/3 cup red bell pepper, finely chopped
1/3 cup red onion, finely chopped
salt and freshly ground pepper to taste
1 avocado
Stir together the sauce ingredients in a large bowl. Stir in the chicken and veggies. Then taste it and see if you want a little salt & pepper.
Serve it up on bread with sliced avocado–which makes it absolutely the best!
I love a good chicken salad. This sounds wonderful. I bet being involved with a book club is such fun!
Yep, love the book group– We’re celebrating 30 years of monthly books together in August. It keeps me reading wider than I would do on my own…

looks so good – on these hot days its great to have some good food that doesn’t need cooking! This would be another good use of left overs from a Safeway (or any) roasted chicken!
