Hello all– Here’s a happy little coffee cake that would be great for a party bunch-y kind of meal or for dessert after dinner with a scoop of ice cream nestled up beside it.
It’s so easy to bake up and there’s enough for small crowd. It’s one of those stand-by kinds of recipes you use over and over again. It’s sort of like a chocolate cookie that blossomed into a cake!
CHOCOLATE CHIP COFFEE CAKE
2 cups flour
1 cup sugar
1/2 tsp. salt
1 tsp. baking powder
1/2 cup canola oil
3/4 cup unflavored yogurt
1 1/2 cup mini chocolate chips
1 1/2 cup walnuts, coarsely chopped
1/3 cup powdered sugar, for dusting the top of the cake
In a large mixing bowl, stir together the flour, sugar, salt and baking powder. Then mix in the oil, vanilla, eggs and yogurt. Finally fold in the mini chocolate chips and walnuts.
Spoon the batter into a 10″ tube pan that has been sprayed with cooking spray– and put it into a 350 degree oven for 50 to 60 minutes, until a small knife inserted into the cake comes out clean.
Let the cake cool before you remove it from the pan. Then dust the top of the cake with powdered sugar shaken on through a sieve. It’s ready!
