Ginger Peanut Broccoli Slaw

Hi there– I am an avid cole slaw fan.  I’m always up for a new version, especially with summer right around the corner.  Lately I’ve been buying this bagged Broccoli Slaw at our market.  So much crunch and more veggie flavor than the cabbage I usually chop up.  And it’s easy!  Just open that bag and pour it into the sauce.  5 minutes.  Done.  And delicious!

GINGER PEANUT BROCCOLI SLAW
1/2 cup cilantro, chopped
1/2 cup peanuts
1 lime, juice (about 2 tab.)
1/2 tsp. salt
3 tab. canola oil
1 tab. rice wine vinegar
2 tab. sugar
1 tsp. ginger, peeled and minced fine
1 bag “Broccoli Slaw”*

In a mixing bowl whisk together the cilantro, peanuts, lime juice, salt, oil, vinegar, sugar and vinegar until it’s all well blended.  Then mix in the bag of broccoli slaw and set it on the table!  What could be easier than that?!

    • Hi Debbie– do you live close enough to shop at the Santa Monica Farmers Market?? Been there a couple times and wish it were closer!! And I have a bee in my bonnet to have breakfast at Huckleberry (also in Santa Monica!) You live in a food wonderland! xo

      • Hi Rhonda! I actually live in NY now — drove cross country from Santa Monica last September. It was a fantastic peace ride 😀 Anyway, I visit pretty often, and I may be moving back. We’ll see. In the meantime, enjoy the great food of SoCal, and many blessings.

      • Oh yes, I did live fairly close to the farmer’s market, though I didn’t go a lot BC parking wasn’t the easiest. I do go to my local farmer’s market in Brooklyn – it’s only two blocks away walking distance. Really fun and healthy.

          • They do, Rhonda!! It’s one of my favorite things to do on a Saturday: get up, meditate, go for a run in Prospect Park, and then shop at the Farmer’s Market on the way home. 🙂 And then make breakfast!

            • I’d love that… WE did get to Prospect Park on our trip– went to the Botanical gardens across the street and then into the park to see the historic Dutch home and wander a bit. So many amazing trees, so green compared to our little desert clime here in CA!

          • We’ve already made a plan (places to visit and things to do) for our summer break, hopefully it’ll be realized. Considering the results of the national elections, seems like peace and order condition is so so. We don’t really know what’s gonna happen once the new president assumes his office in July.

            • Hi Lilly– hope all your plans fall into place– we are just doing small travels this year, taking the grand-girls to San Francisco to visit cousins and a trip across country to Wisconsin for a week at a lake with all our kids! Waiting to see pics of all your travels…

    • Hey Kat- I’m excited that you’re trying it. I love that bagged broccoli stuff! Hope your week is going well too. Busy here-having a Bridal shower for a teacher fro school, Wednesday afternoon & I’m not sure if 5 or 50 people will show up!
