Delicata Squash


Hi all– Been seeing this squash pop up in recipes here and there.  It’s so pretty (for a squash!) and so I looked it up on Wikipedia– “creamy flavor and texture,”  “most commonly baked, but can be microwaved, sautéed or steamed,” “good source of dietary fiber and potassium.”  But mostly I liked it because it was so pretty.

Then I saw them piled high at Trader Joe’s and picked one up to have with our salmon that weekend.  It did have that creamy texture and flavor– you eat it skin and all!  And so easy to bake up.  I wonder if you’ve been eating it??


1 large Delicata Squash
2 tab. olive oil
salt & freshly ground pepper

Cut the squash in half the long way.  Scoop out the seeds and cut it into neat slices.

Toss the pieces in a bowl with the olive oil and liberally salt & pepper it.  Then spread the squash onto a baking sheet and scrape all the oil from the bowl over the squash.

Bake it at 400 degrees for 12 o 15 minutes and eat it piping hot from the oven.  I think you’ll love it!
