Hi friends– End of the weekend here. How was yours?? Friday night the young moms from our table at MOPS (mothers of preschoolers) came over and we cooked dinner together. So fun!! And we sat and talked til after 11:00. Love those girls.
Besides that we had a couple quiet days–lots of reading and long walks. And here is a good dinner idea for a lazy Saturday supper. With a big salad and some rice, it’s ready in less than 30 minutes.
HONEY CILANTRO LIME SALMON
1 pound filet of salmon
salt
freshly ground pepper
1/4 cup butter, melted
juice of 1 lime
3 tab. honey
3 cloves garlic, minced
1/3 cup cilantro, chopped
Line a baking dish with foil and spray it with cooking spray. then set your salmon filet in the center of the foil, liberally sprinkling on salt and pepper.
In a bowl, mix the melted butter, lime juice, honey and minced garlic. Spoon it over the salmon and fold the sides of the foil up over the salmon.
Bake it up at 350 degrees for 15 to 20 minutes (depending on the thickness of the salmon). Then turn on the broiler and cook 2 or 3 minutes more to crisp the stop.
Put it on a pretty plate and sprinkle the cilantro on top to serve it up nice and hot.

I’m still up and down with how I’m feeling.
No we have always struggled with my kids and sleeping, but my son starting school has helped keep him on a more consistent bed time routine. He’d stay up all night if you let him! I don’t know what he has against sleep. . .
It’s so hard Lacey– you need a little quiet evening time with kids asleep. Glad school’s helping… We have a couple night owls in our family too. take care friend, xox

Looks delicious, Rhonda. I like salmon but don’t buy it as often as I’d like. The Wild is available in the summer ( in the supermarket) but this time of year only farm raised is available. I hope your week is off to a great start!😃🎈🦋

HI Rhonda, salmon is definitely healthy! We are finally getting out tonight. We are going to a Tom Petty cover band show at a theater about 45 minutes away. I’m looking forward to it. That does sound fun Mary!! How was the concert?? Hoping your snow is behind you for this year… We have lots of family in for Easter and the egg hunt for the grand-girls. So I’m happy for that. And then we are going on a trip with friends. So good things ahead… Will have both boys home for Easter?? Do you do a celebration?? hugs hugs friend.
The concert was fun, Rhonda! We sang and laughed but there was an intoxicated lady beside me the whole night. I took her actions in stride, because that’s how I am. Your Easter sounds incredible filled with family and grandchildren, exciting! Ours is quieter but we will have 10 altogether here. My youngest son is not coming home as it’s a 7 hr ride back and forth just for the weekend. I’ll miss him dearly but will pick him up in May to come home for the summer.
Yep, it’s hard to get home for weekends when schools so far away. 2 of our kids were near San Francisco and that’s a 7 hour drive too. But summer is not that far off! And– glad your concert was so fun (in spite of your seat mate!) hugs!
Hi Rhonda, I guess we’re lucky Branden still comes home for summer. It’s a special time although he will be working and such. yeah, a 7 hour drive is tough in one day, don’t you think? That’s what we’ve been doing as we don’t stay over. I would like to stay over for his graduation though, two years away. I hope things are wonderful there. How’s the weather? Hi Rhonda, That sounds like so much fun! I can’t wait for the boys to come and for Bran to come for the summer. Right now he’s having a hard time. His college is closing down, bankrupt and he’s lost his four year scholarship totaling 100,000. We are leaning on prayer and God’s guidance to know what to do next. He is already looking at other colleges and leaning towards Lesley University in Cambridge, Mass. I hope you are having a wonderful week, friend. I always enjoy catching up with you!

Yes, it’s very disappointing and stressful for Branden, his girlfriend, her parents I’m sure, and us. All the credits will be accepted at Lesley University. They toured the college today, in Cambridge, Mass. We go next Sunday to tour with our son and ask questions. God will lead the way and give us strength as we get through. We are headed there Sunday. Friday we pick up Branden for the weekend as there’s a birthday party for my dad, he will be 80. That Sunday when we bring Bran back we’ll check out Lesley. It’s right in Cambridge, more city like than where he is now. God bless you, Rhonda. I hope all is well with you.
