Hey there– during our stay in Lijang, China, Larry found ourselves breakfasting in the same place most days– the “Prague Cafe.” Started by a Chinese young woman who had backpacked through Europe and befriended another traveler from Prague. So when she ended back in Lijang, she opened this cozy cafe, serving pastries, sandwiches and breakfasts that were decidedly European. One morning Larry asked for the herb omelette and it was so unique and delicious, we tried our hand at our version back home in our own kitchen. Here it is:
HERBED OMELETTE
1 tab butter
2 eggs
1/4 cup cilantro, chopped fine
1/4 cup green onions, chopped to bits
1/4 cup Italian parsley, chopped fine
2 tab. water
salt & freshly ground pepper to taste
1/4 cup colby jack cheese
Melt the butter in a nonstick pan. Meanwhile beat the eggs, cilantro, green onions, parsley and water together. Season with salt and pepper. Pour the egg into the pan and cook on medium to medium low heat. Sprinkle on the cheese. Cook until the eggs are set and then fold onto your dinner plate and eat it while it’s hot!
