Hello all– This is one of those dishes you put together with by cleaning out the fridge! Look for all the brightest crispiest veggies you have in the drawer, make the dressing and done! The recipe I worked from called for cabbage & fennel (don’t have those on hand), so I threw in some cucumbers and those little red peppers instead. So fresh and yummy– Just right with an end of warm weather bar-b-que!
SUAGR SNAP PEA SLAW
Dressing:
1/2 cup unflavored yogurt
1 tab. cider vinegar
1 tab. honey (or sugar)
1 tsp seedy Dijon mustard
1/4 tsp. salt
Veggies:
2 cups sugar snap peas, chopped (8 oz. package)
2 medium carrot, peeled & shredded
2 small Persian cucumbers, sliced thin
1/2 cup sweet red peppers chopped
In a large mixing bowl whisk together the dressing ingredients– yogurt, cider vinegar, honey, mustard and salt. Then drop in the prepared veggies. Stir it up and serve!! How easy is that?!
Really easy … thanks for the recipe

That’s wonderful to hear, Rhonda! I hope you are having a great week! ❤
Cleaning out the fridge recipes are where I shine. . . and so do you. I love how you make your own dressings.
Thanks Lacey– I know. Lately I’ve been trying to use up all the fridge extras– and empty out the freezer a bit!! I think it makes me feel like I’m saving money! And that makes me think — Our Aldi Still Has Not opened here. They are taking their time building that place! Waiting to try it on your good recommendation! hugs hugs!
It makes me feel like I’m saving money too.
Oh man I can’t wait for yours to open. I know they’ve been remodeling all the Aldi’s around here, and it seems like they’ve been under construction for months!
I’ll let you know when it opens up! It’s funny how we get attached to our markets– I feel like mine is my home away from home! take care Lacey!
Yes! And you know what they carry, and those things become staples in our homes.
Thank you for reminding me that I have a package of sugar snap peas in my fridge. Such an easy recipe – I will be making this tonight 🙂
Oh! I hope you like it! (it holds up well for leftovers too). xo
